This is so easy to prepare that you’ll want to stick to it more often. Is is such a great addition combined with roasted meat.
Vegan Creamy Potato Salad
Makes 4 to 6 servings
6 medium potatoes, boiled until tender
1/2 cup vegan mayonnaise
1/4 cup distilled white vinegar (or acceto balsamico)-balsamic vinegar
1 large red onion, chopped
1 cup chopped celery
Salt and pepper, to taste
Paprika (optional) ,fresh dill(optional)
Cut the potatoes into cubes or on circles. Combine all the ingredients in a bowl and season to taste.
Sprinkle paprika on top and fresh dill,if desired.
For a variation you can add mustard ,use pickles or pickle juice instead of vinegar.You can make any variation you can think of.
