
Light Meal
Among many vegan recipes, this one is my favorite one because it is so easy to prep it and it is delicious as well.
Potatoes.
Whether mashed, baked or roasted, people often consider potatoes as comfort and vegan food. It is an important food staple and the number one vegetable crop in the world. They are available year-round as they are harvested somewhere every month of the year.
This is so easy to prepare that you’ll want to stick to it more often. Is is such a great addition combined with roasted meat.
Vegan Creamy Potato Salad
Makes 4 to 6 servings
Ingredients
6 medium potatoes, boiled until tender
1/2 cup vegan mayonnaise
1/4 cup distilled white vinegar (or acceto balsamico)-balsamic vinegar
1 large red onion, chopped
1 cup chopped celery
Salt and pepper, to taste
Paprika (optional) ,fresh dill(optional)
Preparation
Cut the potatoes into cubes or on circles. Combine all the ingredients in a bowl and season to taste.
Sprinkle paprika on top and fresh dill,if desired.
For a variation you can add mustard, use pickles or pickle juice instead of vinegar.
You can make any variation you can think of.
